10 g powdered gelatin

Wash the peaches thoroughly and remove the stones. Cut the peaches into smaller pieces and place them in a blender. Blend until you have a completely smooth puree. Divide the peach puree into two approximately equal portions. Place one portion in a small saucepan and keep the other portion aside. In a small bowl, combine the powdered gelatin with two tablespoons of cold water. Stir briefly and leave it for several minutes to bloom. This allows the gelatin to absorb the water and dissolve more easily later. Prepare all the ingredients before starting the chocolate cream because the final assembly is easier when everything is ready
- Assembling
Place the saucepan with half of the peach puree over medium heat. Add the sugar and stir continuously. Cook for approximately 10 minutes, stirring regularly, until the sugar has dissolved and the puree becomes slightly thicker. There is no need to bring it to a vigorous boil. The aim is simply to reduce the mixture slightly and concentrate the peach flavour. Remove the saucepan from the heat. Add the bloomed gelatin and stir until it has completely dissolved. Then add the remaining half of the peach puree and mix well. This combination of cooked and fresh puree gives the dessert a lovely texture while helping to preserve the fresh flavour of the peaches. Set the mixture aside and allow it to cool completely or until it is just slightly warm.
Meanwhile, prepare the white chocolate cream. Pour 100 ml of the heavy cream into a small saucepan. Heat it over medium heat, but do not allow it to boil. Remove it from the heat just before it reaches boiling point. Add the broken white chocolate and leave it for about one minute. Then gently stir with a spatula until the chocolate has completely melted and the mixture becomes smooth and homogeneous.

Pour the remaining 200 ml of cold heavy creaminto a clean bowl. Beat it with an electric mixer until it becomes thick and forms firm peaks. The cream should hold its shape when the bowl is carefully tilted. Be careful not to overbeat it because the cream can become grainy. Allow the melted white chocolate mixture to cool until it is lukewarm. Slowly add it to the whipped cream and gently fold with a silicone spatula. Work slowly and carefully. The goal is to combine the chocolate and cream while keeping as much air as possible in the mixture. Continue folding until you have a smooth, light and creamy white chocolate mousse.
Now prepare the glasses. Place the glasses on a tray and carefully tilt them. You can use a folded kitchen towel or another stable support to keep them at the same angle. Add approximately 100 g of peach pureeto each glass. Keep the glasses tilted while adding the white chocolate cream. Carefully spoon or pipe the cream over the peach puree. Try not to disturb the peach layer. Once all the glasses are filled, place the tray in the refrigerator while keeping the glasses tilted. - Serving
Refrigerate the desserts for at least 3 hours, or until the cream is completely set. For the best result, you can prepare them the day before and leave them in the refrigerator overnight. Once chilled, carefully return the glasses to an upright position. Decorate each dessert with finely grated white chocolate.
