Start by preparing the ladyfinger baskets. Take a standard 12-cup muffin pan and keep it ready on your work surface. Reserve approximately 30 ladyfingers for the sides of the baskets. Cut approximately one-third from the bottom of each ladyfinger. Keep these cut pieces because they will be used for the bases. Place four ladyfingers around each muffin cavity, positioning them upright around the sides. The ladyfingers should extend slightly above the rim of the muffin cavity. This creates the characteristic basket shape and gives the finished dessert a beautiful appearance. Take the remaining ladyfingers together with the cut pieces and place them in a blender. Pulse until you have fine crumbs. Melt the 125 g butter and add it to the ladyfinger crumbs. Mix thoroughly until all the crumbs are coated with butter and the mixture resembles a moist biscuit base.

There is no traditional cooking involved in this recipe. The next step is preparing the two mascarpone creams. Place the mascarpone, powdered sugar and cold heavy whipping cream in a large bowl. Divide the finished cream into two equal portions. Melt 50 g chocolate using short intervals in the microwave or over a double boiler. Allow the chocolate to cool slightly. It should be melted and smooth but not hot. Add the melted chocolate to one portion of the mascarpone cream. Mix gently until the chocolate is completely incorporated and the cream becomes a smooth, pale chocolate color. You should now have one light mascarpone cream and one chocolate mascarpone cream.

Begin assembling the baskets. Place approximately one tablespoon of the buttered ladyfinger crumbs into the bottom of each muffin cavity. Press the mixture gently with the back of a spoon.
