Ingredients
4 pork cutlets (bone-in)
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
1 tbsp butter
1 garlic clove, pressed
200 ml (1 tea cup) cooking cream
3 tbsp Dijon mustard (divided)
200 ml water (divided)
Directions
- Preparation
Pat the pork cutlets dry with a paper towel to remove excess moisture. Sprinkle salt and black pepper evenly over the cutlets, ensuring both sides are well seasoned. Rub the seasoning into the meat for better absorption and flavor. - Cooking
Heat a large pan over medium-high heat. Add olive oil and butter, allowing the butter to melt completely. Once the pan is hot, carefully place the pork cutlets inside. Let them sear undisturbed for about 5 minutes until a golden-brown crust forms. Flip the cutlets and cook for another 5 minutes on the other side. Once seared to perfection, remove the cutlets from the pan and transfer them to a baking tray, arranging them in a single layer.
In the same pan, add the pressed garlic and sauté for about 30 seconds until fragrant. Pour in 150 ml of water and stir well, scraping up any browned bits from the bottom of the pan. Add 2 tbsp of Dijon mustard and continue stirring for 2–3 minutes until the mixture is smooth and well combined. Add the remaining 1 tbsp of mustard along with 50 ml of water, stirring until fully incorporated. Season with black pepper to taste, then pour in the cooking cream. Stir for another minute until the sauce is rich and creamy. Remove from heat. - Finishing
Pour the prepared mustard cream sauce evenly over the pork cutlets in the baking tray, ensuring each piece is well coated. Preheat the oven to 180°C (350°F). Place the tray in the oven and bake for 10 minutes, allowing the flavors to meld together. Remove the tray from the oven and let the cutlets rest for a few minutes before serving. - Serving
Pair these juicy pork cutlets with creamy mashed potatoes, roasted vegetables, or a fresh salad for a complete and delicious meal. Enjoy your perfectly cooked pork cutlets in a rich and flavorful Dijon mustard sauce!
