Tasty stuffed peppers with minced meat and rice. Stuffed peppers are very popular in many countries with various ingredients. This recipe is very popular on the Balkans. Variance with eggs and yogurt sauce is one of the most popular recipes in Bulgaria. This meal is a very good combination with homemade bread, especially for family lunch.

minutesThis traditional Bulgarian recipe is very tasty. Main ingredients: you need a mix of pork and beef minced meat. You can use only beef meat as you prefer. The other ingredients you need are peppers, rice and onions. You need eggs, yogurt and flour for the sauce. You can precook the meat before you stuff the peppers. The other way is to stuff the peppers with the raw ingredients. I precook the ingredients in this recipe.
For the preparation, you need a pan for the precooking and casserole for the sauce. Do not forget a tray with a lid for the final cooking.
Ingredients

500 g. Minced meat
6 Medium Red and Green peppers
1 Medium Yellow onion, chopped
1 Medium Carrot, chopped
1 tea cup Rice
5 tbsp. Oil
2 tsp. Paprika
1 tsp. Savory
Black pepper
- Sauce
2 Medium eggs
250 g. Yogurt
100 ml. Milk
3 tbsp. Flour
Directions
- Start
Preheat the oven to 180 C.
Prepare the peppers. Riddle with needle and wash them. Chop the onion and the carrot.
- Cooking
Put the oil in the pan and heat it. Add the chopped onion and the carrot. Cook them for 3–4
minutes while stirring. When it is ready, add the minced meat. Tear apart the minced meat with your fingers. Sequentially add the black pepper, the savory and the paprika. Finally, add the rice and salt to taste. Cook it for 10 minutes until the minced meat crumbles and gets browned.
Take the peppers. With the fingers, put some salt on the inside. With a spoon, take from the ready mixture and stuff the peppers.
Arrange them in the tray. Add one cup of water, put the lid over, and it is ready for baking.
Bake it for 40 minutes until the peppers get browned.
Remove from the oven and set aside. - Finish
Finish with sauce preparation. In the casserole, whisk the eggs. Heat the stove to a low temperature to temper the eggs.
Dissolve the flour with the milk. Pour carefully the mixture to the eggs. Keep whisking the mixture. Do it for 3–4 minutes until thickens. Next is to add the yogurt. Whisk until the mixture becomes smooth.
Turn off the stove. Take with a ladle or large spoon the pepper sauce and start pouring carefully into the egg sauce. Don’t stop stirring. Add 4–5 ladles so to equalize the temperature of the sauces. When it is ready, pour the egg sauce into the tray with the peppers. Carefully use a spoon to move the peppers to spread the sauce. - Serve
