These smoked ribs with bean, leek onion and cabbage are fantastic. The two types of beans give it a unique taste. Especially the red one is so sweaty. On the other hand, the cabbage imparts a sour tinge. Very interesting combination for these of you that like sour and lite sweet combination. Total of time for preparing this meal is approx. 50 minutes, but it’s worth it.
I use for this recipe sunflower oil, but you can use olive oil. The dry red pepper is optional. I use it until cooking, and after the meal is ready, remove it together with the bay leaf.

Notes
- If you can’t find sour cabbage, you can prepare it by yourself. Chop the cabbage, add salt and start to crush it. Continue until your hands become wet and the cabbage starts to separate water. Put it in the jaw and press well until water appears on the top. For each 2 kg. cabbage, add 50 g. salt. Leave it at room temperature. The cabbage will be ready for use in three days.
