Very quick and delicious omelette, a fast dish for eggs lovers. I made it with olives, and they give this recipe special taste, but this is one choice. You can try without them. If you don’t like olives, of course. I use black olives; you can use Kalamata or green olives. I use pitted olives for easier 😊

Ingredients
8 Eggs
100 g. White cheese, crushed
150 g. Yellow mozzarella, grated
10 Black pitted olives
Black pepper
Directions
- Start
Smash the eggs in a deep bow so to have enough space for the cheese and mozzarella. Add the mozzarella, cheese and olives and stir. Finally, add the black pepper and rosemary, if you prefer. - Cooking
Heat the pan on medium temperature. Spread some butter on it. Use a ladle to put the mixture in the pan. - Finish
Cook it for 3–4 minutes on one side. After that, flip it carefully on the other side. I use a long spatula to help myself. - Serve Y
You serve with different types of salad or even only with tomatoes 😁
