Fantastic recipe with a slight milk taste. Not time-consuming if you have a ready cake layer. But if you don’t have, you will need 40 minutes more. Despite this, the recipe is not difficult to prepare.
Main ingredients you need
Cake layer, cottage cheese, apricot compote, mascarpone and powder sugar. You will need eggs, sugar and flour for the cake layer.
Tools you need
Mixer, big bowl for mixing, hand or normal blender, cake spatula. You will need a cake pan to help you with the cake assembling.


Ingredients

  • Cake Layer – recipe
  • 5 Medium eggs

  • 150 g. Sugar

  • 150 g. Flour

  • 1 tsp. Baking powder

  • 1/2 tsp. Vanilla sugar

  • Cream
  • 200 g. Cottage cheese

  • 250 g. Mascarpone

  • 100 g. Powder sugar

  • 200 ml. Apricot syrup from the compote

  • 200 g. Apricots from the compote

  • Decorations / optional
  • 100 g. Milk chocolate

  • 2 tsp. Butter for melting chocolate

Directions

  • Start
    Divide the cake layer into two parts. Take the apricots and blend them. Put the cottage cheese, mascarpone and powder sugar in the bowl. Add half from the apricot syrup. Mix them until reach a homogeneous mixture.

  • Prepare
    Put the cake layer over the bottom of the cake pan. Take the rest of the syrup and pour with the spoon over the cake layer. Then put the blended fruits on top. After that, take the cheese mixture and put over the apricots. Use the side of the cake pan for even distribution of the cream.

  • Finish and serve
    When you use the whole mixture, remove the side of the cake pan. Take the cake spatula and start smoothing the cake. When it is ready, you can decorate it.
    Take the butter and melt in the microwave the chocolate on it. Take the spoon and make some lines or other figures. You can melt half spoon butter with two chocolate bars to prepare some topping. Make spots over the cake with the topping. You can decorate in another way. It is up to your fantasy.
    Put the ready cake in the fridge for a couple of hours or better overnight.
    Serve with coffee or as dessert for your family dinner or holidays. You are going to impress every guest or family member with your creation.
