Bean stew recipe

Fantastic quick and tasty white bean stew recipe

Fantastic quick and tasty white bean stew recipe, very popular on the Balkans. This is one of the favorite meals in this region. Traditionally, in most families, it is prepared almost every week.

This recipe can be made using raw beans or canned beans. I will show you how to prepare it with canned beans. This is the faster variant. If you prefer the raw bean, you have to boil it first. This is a time-consuming process. First, you have to make bean soup. Thereafter, you have to use it for preparing the meal.

Depends on the region, there are some specifics because of the spices used. In my recipe are used spearmint and lovage. I use whole dried red pepper while cooking this meal for a sweeter taste. When the meal is ready, I remove it.

Ingredients

  • 1 Medium Yellow onion, chopped

  • 1 Medium Carrot, chopped

  • 100 g. Tomatoes, grated

  • 1 tbsp. Flour

  • 4 tbsp. Sunflower or Olive oil

  • 1/2 tsp. Lovage

  • 1/2 tsp. Spearmint

  • Parsley

  • 1/2 tsp. Salt

  • 1 tsp. Paprika, optional

  • 2 Dried red peppers, optional

Directions

  • Preparing and Cooking

Remove the beans from the can and rinse and drain them. Chop the onion and the carrot.
Put half of the oil in the saucepan and preheat to medium. Add the onion and the carrot and fry them for two minutes. Stir them periodically so you don’t burn the onion. Add the bean and 1/2 cup of water. When it starts to boil, add the grated tomatoes with the flour dissolved on them. Finally, put the salt, spearmint, lovage and dried red peppers. Leave the meal to simmer for 25 minutes, or until all vegetables soften. Stir periodically.
When it is ready, remove from heat. Remove the dried peppers from the ready meal.
In the small casserole, preheat the rest of the oil. Put the paprika inside and fry it for 30 seconds on low heat so as not to burn it. Pour into the ready bean dish. This step is optional. You can skip it if you don’t like fried paprika.
Serve warm with finely chopped parsley.
You can serve it as a single dish or in combination with some salad. This meal is very suitable with baked or grilled sausages or with fried meatballs.
