The two types of onions are a very good decision. Practically, you can use ripe onion, but these two types give the dish a more fresh taste.

5-6 Stalk Spring onion
1/2 Stalk Leek
150 g. Tomatoes, chopped
5 tbsp. Olive oil
1 tbsp. Paprika
1/2 tsp. Savory
Black pepper

Directions

Chop the leek and spring onion on rings. Prepare the pan and heat to medium the oil. - Cooking
When the oil is ready, add the leek and spring onion. When the onion start caramelizing, add some salt to taste, paprika and black pepper. Leave it for 5–6 minutes until the onion starts melting. Stir periodically. After that, add tomatoes and savory. Add 1/2 cup of water. Cook it for another 5 minutes until the mixture becomes thicker. - Finish
When it is ready, start adding the eggs. Leave it in the pan without stirring. The same technique as smoked eggs. Don’t stir the mixture, so you keep the eggs whole. Take from sauce from time to time and pour on eggs. Shake the pan from time to time. You will need from 5 to 10 minutes, depending on how soft you prefer the eggs. - Serve
Put parsley on top before you serving. You can serve it as alone dish, but is delicious with roast lamb.
