Today, we whipped up something warm, cheesy, and oh-so-satisfying: Cheesy Ham & Sausage Egg Tortilla Rolls!
Perfect for brunch, meal prep, or even breakfast-for-dinner, these rolled beauties are loaded with flavor and melty goodness.
Ingredients
9 large eggs, beaten
3 tsp butter
100 g ham, finely chopped
3 Debrecener sausages, sliced into rounds
75 g grated Parmesan (divided – 25 g per roll)
3 triangles of creamy cheese (e.g., cream cheese portions)
3 soft tortilla wraps
50 g shredded mozzarella cheese
Salt & pepper to taste (optional)

- Preparing
To start, slice the sausages into thin rounds and chop the ham into small cubes. Crack all 9 eggs into a bowl and beat them well until fully mixed. Grate your Parmesan cheese and set aside three portions of 25 g. Unwrap the creamy cheese triangles and preheat your oven to 180°C (350°F). - Cooking
To prepare the first roll, place a pancake pan over medium heat and add 1 teaspoon of butter. Once it’s melted, add one-third of the chopped ham and one-third of the sausage slices into the pan. Let them sizzle for about 30 seconds to bring out their aroma and start browning slightly. Pour one-third of the beaten eggs over the meat, gently tilting the pan to spread the mixture evenly. While the eggs start to cook, sprinkle 25 g of grated Parmesan across the surface and place one triangle of cream cheese in the center.
Once the eggs have mostly set on the bottom, carefully place one tortilla on top, gently pressing it down to adhere to the egg. Using a wide spatula, flip the entire egg-tortilla round so that the tortilla is now on the bottom. Let it cook for another minute, so the tortilla gets slightly crispy and golden. Then, using your spatula, gently roll the whole thing into a wrap and set it aside.
Repeat the entire process two more times using the remaining ham, sausage, eggs, Parmesan, and tortillas. You’ll end up with three beautifully rolled tortilla wraps, each filled with creamy, savory goodness. - Finish
Place all three rolls in a baking dish and sprinkle them generously with the shredded mozzarella cheese. Bake the dish in the preheated oven for 1 to 2 minutes, just long enough to melt the mozzarella and create a gooey, golden top. Once done, remove the dish from the oven and let it cool slightly before slicing and serving. - Serving
These rolls are perfect on their own, but they also pair wonderfully with a side salad or dipping sauces like sour cream, salsa, or spicy mayo. They’re just as tasty cold, making them a great option for lunchboxes or grab-and-go snacks.
