Tasty and fast chicken porridge recipe. This is a traditional Bulgarian dish. You simply need chicken breast, flour and some oil. I changed it a little bit, adding parmigiano for better taste. Others think that what makes it delicious is fried butter with paprika. You can cook it for lunch, and I am sure that will become one of your favorites.

minutesThe chicken porridge recipe is so simple to cook it. You don’t need a lot of time. You only need chicken breast meat and flour. As kitchen utensils, you need a pot for boiling the meat. Bowl and cooking mallet for chopping the meat, casserole for the butter filling, and finally pan for cooking the porridge. So, let’s start preparing this famous recipe.
Ingredients
250 g. Chicken breast meat, (or meat from chicken legs)
5 tbsp. Flour
6 tbsp. Sunflower oil
1 tbsp. Butter
3 tsp. Paprika
50 g. Parmigiano, grated
1-2 Cloves garlic
Black peppercorns
1 Chicken broth
Directions
- Start
Start with the meat boiling. Put the meat into the pot with 1 L. water. Add the black peppercorns, salt and garlic to the boiling water. You can use broth from boiled meat or normal water for the cooking. If you prefer broth to the boiled meat, remove the foam that forms during boiling. Boil for 10–15 minutes.
When it is ready, leave it to cool for a couple of minutes. Shred the meet with your fingers and put into bowl. Chopped the boiled garlic and add to meat. Chop the meat and garlic with cooking mallet for 1 minute until it softened and become on threads.
The meat quantity is from 1 chicken breast. If you don’t like chicken breast meat, you can use meat from chicken legs. You will need 2-3 chicken legs. - Cooking
Heat the oil in the pan. Add the flour and stir continuously until browned. Add the 2/3 from the paprika. Don’t stop to stir for another minute. Be careful not to burn the paprika. Start to add the broth/water to the flour, approximately 3 cups. You can add 1 chicken broth powder for better taste. Add the water slowly while stirring. Don’t stop until the liquid finishes and the mixture becomes smooth.
When is ready, add the meat. Stir carefully and live to cook for 3–4 minutes. - Finish
When the porridge is ready and is still hot, start making butter with paprika. It is an optional addition but gives a special taste to the meal. Put the butter in the casserole and fry the rest of the paprika for a couple of seconds. - Serve
Serve while it is hot. Put the chicken porridge in the soup bowl, pour with the ready butter, and put the parmigiano on top. Add some baked bread and wine. Have a lot of joy🥣
