Very tasty recipe for chicken livers with rice. This recipe is very easy to prepare. Very similar with “Dirty Rice” recipes from Louisiana. Named this way because when you cook white rice with meat or giblets, the rice changes its color. The combination of giblets and rice is very popular in the Balkans, especially for a chicken and lamb stuffing. In this variation, I will use only chicken liver and rice and bake them in the oven.

This recipe is delicious. It has a specific taste because of the liver on it, but would be highly appreciated by the liver lovers. It is very suitable for a dinner or a side dish for chicken meals. You can use it as stuffing for turkey or chicken.
There is some specificity when you cook chicken liver. Soak the liver in the water to remove the remaining blood. You can use milk for this step. Some people boil them for 1–2 minutes to remove the extra blood. But these steps are optional and are as you prefer.
You need
For this famous dish, you need rice and chicken livers. You need a carrot, an onion and spear mint. Don’t forget and black pepper.

Pan for the onion and carrot caramelizing.

Ingredients

  • 400 g. Chicken liver

  • 1 cup Rice

  • 1 Medium Onion, chopped

  • 1 Medium Carrot, chopped

  • 50 g. Olive oil

  • 1/2 tsp. Spear mint

  • Black pepper

Directions

  • Start
    Soak the chicken liver for 30 minutes in water to remove the remaining blood.
    Chop the onion and the carrot.
    Preheat the oven to 180 °C.

  • Cooking
    Preheat to medium, the oil in the pan. Add the onion and the carrot and start caramelizing it. Cook for 2–3 minutes until softened. Stir occasionally. Add the black pepper and the spearmint.
    Then add the rice and cook it for another 2–3 minutes. Add the 1 cup of water. Leave it to boil for a couple of minutes.
    Take the tray and pour the mixture on it. Add 2 cups of hot water.

  • Finish and serve
    Put the chicken livers on top. Stir carefully. Replace the tray in the oven.
    Cook it for 20 minutes until the water evaporates.

    Serve for dinner or as a side dish to chicken dishes. Enjoy😊
