Tasty Bulgarian banitsa with brined cheese. Old traditional recipe for Bulgaria that you fall in love with. Based on historical data, the word “banitsa” comes from South Slavic. Mean something like “on fold”. Very sampled and delicious at the same time. Very suitable for breakfast with the family. Crispy and soft. With a fantastic buttery smell and unique taste.

For this yummy recipe, you need only 5 main ingredients. It’s very quick and tasty. No complex processes. There is only backing for 40 minutes, and it is ready.
To prepare it, you need one big bowl to mix the ingredients and a medium tray. It is enough to bake 6 circles from the filo pastry sheets.

Ingredients

  • 400 g. Fine filo pastry sheets

  • 300 g. White brined cheese, crushed

  • 4 Eggs, medium

  • 1 cup Yogurt

  • 75 g. Butter

  • 1 Yolk

  • 1 tsp. Baking powder

Directions

  • Start
    Crush the cheese and whisk the 4 eggs. In the last egg, you have to separate the white from the yolk and add the white to the others. Leave the yolk for later. Melt the butter. Add the backing powder to the yogurt and stir until it makes bubbles. Add the cheese to the whisked eggs, and after that, the yogurt. Stir until mixed well.
    Get the filo pastry sheets and spread them out on a flat surface.

    Take the melted butter and, with a brush, spread it over the first pastry sheet.
    Spread on top of the butter with some of the mixture. Use a tablespoon and put some small parts in various places over it. You can use the brush or put it with a spoon.
    When is ready, take the two top sheets and roll them. When you finish, carefully twist each length of pastry and form them into a round coil shape. Put them on the smeared tray. Do the same with the others.
    When you put them all in the tray. With a brush, spread what’s left from the melted butter on the top of them. After that, do the same with the separated yolk from earlier.Banitsa with brined cheese
  • Finish
    Bake in a preheated to 160 C oven for 40 minutes until browned. Be careful not to burn out the top. If it is necessary, cover with baking paper or foil.

    Serve with milk, tea or juice. In Bulgaria, you can add typical drink boza.
